Think of it. We start with the same great fruit that we use to make our fabulous eau de vie, and then fortify with our fabulous eau de vie. The fortification means that the overall alcohol level of the liqueur is at eighteen percent, which is lower than straight eau de vie, but high enough to prevent further fermentation. The eau de vie does more than just create a more stable environment for the 10-12% residual sugar content; it turns the juice into this amazing fruit liqueur, with powers far beyond those of ordinary mortal fruit. It’s like fruit with extra soul. It’s the Über Fruit. It is so Aqua Perfecta.

Clear and pale gold as sauvignon blanc, the poire liqueur looks deceptively gentle in the glass; on the palate, it has all the honey and heft of sauternes. Every mouthful includes vanilla, pink grapefruit, and a lush overlay of fresh pear that lingers all the way down the silky finish.

St. George pear liqueur is a perfect match for the kind of cheese that makes most dessert wines whimper in fear (like that Stilton sitting in the back of your refrigerator, plotting a kitchen takeover). Its cabernet color and opulent, rolling-in-raspberries aroma only hint at the framboise liqueur’s complexity on the palate. Neither sugary nor jammy, it has the tart-sweet balance of fresh berries, and a swaggering finish with notes of pomegranate and blood orange.
