Reserve Spirits:

Jorg and Lance often seem like they’re on a mission to discover something that they can’t successfully distill. St. George Spirits is the site of a lot of experimentation—small batches of spirits that get squirreled away in barrels and tanks.

This means that rummaging around in the back of the distillery has lead to some very happy discoveries. When we find something really terrific, we bottle it and offer it as part of our Reserve Collection.

De Profundis


Have you ever gone through the attic, opened a box and found some amazing forgotten treasure? That happens here sometimes. Ten years ago, Jörg put sixty gallons of pear eau de vie from his first batch (nearly twenty years ago) into a French oak barrel. There it rested, in the cool depths of the distillery until we stumbled across it once again. De Profundis is a testimonial to the staying power of Jörgs Poire William. After ten years in oak, it retains its true core identity of lush, sweet pear. The aging has layered on wonderful soft notes of vanilla and cinnamon. It's like wallowing in a pear tart without all the mess. De Profundis is limited to 300 bottles. Once it's gone, it's gone forever.

Maestro

Twenty years of custom distillation has created some very fruitful partnerships for St. George Spirits. Through a few of these partnerships, we've been able to distill some amazing wines into brandy. One of these brandies is Maestro. Maestro was distilled from 100% Napa Valley Chardonnay, and was then barrel aged for fourteen years in French oak. The candied orange rind and soft caramel in the nose are echoed on the palate. Maestro finishes delicate and silky, a brandy worthy of a Master Distiller.
